I feel a bit like I should be wearing a "Stop me before I volunteer again" shirt this week... ended up on the planning committee for the annual women's retreat (so far we have a theme (jigsaw puzzle pieces) and a color (purple)...er, obviously a long ways to go), then agreed to an extra shift at the food cupboard to fill in for someone else...then agreed to sing on Sunday, to help a friend shop for new linens at Good Will, to help a disabled friend with a laundry run and then had one of the ladies at the food cupboard ask brightly "So, what are you bringing to the potluck this weekend?"....

Oh, and I'm helping set up a fundraising clothing sale on Friday evening. I forgot there even *was* a potluck. I think I babbled something about salad. Now I have to think of something at least slightly better than dumping cheap salad mix out of a bag.

Fwah. *smacks self*

Any good ideas for a simple, yet creative salad?

Dump the bag of greens and spruce up with mandarin oranges, cranberries, or other tart-colorful fruit?

I'll second this -- just what I was thinking. You could also add walnuts or almonds.

My favourite thing for spicing up a salad is toasted seed mix (a mix of sesame seeds, sunflower seeds and pepitas, lightly toasted in organic soy sauce) which I get from my local health food store, but I have no idea if you would have access to something like that.

Another idea: a variant on tuna salad.
Greens, tin of tuna (in brine or springwater, not oil), raw snow peas or cooled cooked green beans, bean sprouts, can of baby corn, lemongrass (if you can get it) and dressed with lemon juice and fresh black pepper.

I hope you enjoy it! The snow peas + baby corn + bean sprouts + lemongrass give it a sort of Thai/Asian feel, though I guess if you were being proper Thai then you would sprinkle it with chilli flakes...
