I just made up a little batch of this as part of my cunning plan to shred the chicken I have in the crock pot and make up some chicken tacos for dinner tonight - thought it might be worth sharing, not only so I have it in a handy place here, but also as I'm probably not the only person out there who is into lower sodium than commonly found in any storebought mixes. (no sugar or filler either, as a bonus!)

2 tablespoons chili powder
1 1/2 tablespoons ground cumin
1 1/2 tablespoons paprika
1 tablespoon onion powder
1/2 - 1 tablespoon garlic powder
1/8 - 1/4 teaspoon cayenne pepper

Stir together to blend, store in something airtight. 2 Tablespoons of the mix flavours about 1 lb. of your choice of meat (or tofu, I suppose).

As my son says, it is "om nom nommable".

Our women's group at church had their Christmas wing-ding and as it had an international theme I figured this was a good excuse to make a big batch of pfeffernusse, one of those wonderfully fragrant things that I adore and other people sometimes won't even eat.  Found a faboo recipe at allrecipes, liked the anise extract to tone down the anise slightly, had to crush whole cardamom with my pestle because I didn't have any ground (that took a while) and increased the black pepper to 1 1/2 t., added some buckwheat honey with the clover in the molasses and wow - these about make my eyes roll up in my head, mmmmmm.  They're heaven just sniffing them. Thanks to the strange aversion on the part of others, I even had a goodly lot left over to nibble/snarf at home too.

Life is uber-crazy, rather weird, both very good in some ways and quite stressful in others, very mixed right now - I'm grateful for the holidays and cookies and sparkly decorations, they are a welcome distraction and lift the spirits.

Now - all of you go bake something super-tasty, but be sure the people around you don't want it so there's plenty left for you. ;-)

Oh wow - if they weren't a bit of a bother I'd want to make these all the time, so it's probably a good thing they took a while. But oooo yum - Fudge waffles, recipe compliments of Sam/Yaralindi of my LOTR boards, just had to share them. This is the first round:

Recipe under here )

We're already plotting to make them again.

With especial thanks to [livejournal.com profile] piplover for the site that led to the bbq brownies and to [livejournal.com profile] everloyal and [livejournal.com profile] starbells for their help in making them - here are the results of our dessert auction contributions -  I wanted to do a third item that either looked more creative or was sugar-free but kind of went into a funk on Saturday and didn't get it done. Oh well - maybe next year!

and then the less photogenic Barbeque Brownies )
Thank you for all the ideas, ((((flist))))- now to go nibble at what we came home with instead, a cream-cheese bread, a cherry cheesecake and a mini banana bread loaf. Yum yum. We have way too many good cooks there.

Apologies if I've missed anything momentous here the last few days, trying to keep up with the yard and helping sort out the stuff from my grandma's estate have really snarfed my happy-lurky time of late - but I Need YOU, flist!

Our youth group's annual dessert auction is coming up this next Sunday and we're ready to roll up our sleeves and come up with something that is both edible and interesting to bring a good price.  We haven't topped our cat-litter pan with crumbled edible 'litter' and tootsie-roll turds in it yet, but I'm willing to try. Maybe a Dalek cake? Sadly there are only a couple Whovians who would recognize them.

Ideas? Things you've seen done that don't involve fondant/ many pounds of frosting/ miraculous baking skills? Humor is good.

This must be the week for food entries. I completely blame [livejournal.com profile] lothithil, who put up her intriguing recipe with it's sekkrit ingredient right over here - now I have a pan of these cooling on the countertop and would love to see what other variations folks might come up with.

My variation that's healthy from scratch stuff )

I am currently rather addicted to this tasty and rather too easy to make butter mochi recipe because you can make a little pan of it in the microwave way too easily - almost no redeeming characteristics unless you can rationalize the calcium in the milk, but I'm posting it to Share the Love.

Butter Mochi Bars )
I love to dip the gooey squares in sesame seeds - oh wow. This can also be baked for 30 minutes in a greased dish at 350 degrees if you want the 'old fashioned' way.

This past autumn I was feeling so buried in apples that when the little greengage plums came in I ended up just whacking them in half to pull out the pits and stuffing them into ziplocs in the freezer. Finally got around to doing them up today, canning takes sooo long but it's always so nice to see the end result.

Photobucket

They look so home-like and cozy, still warm from the canner. This is a greengage jam made with the apple juice I steamed out from my apples plus a little fructose, a shake of allspice and a bit of lemon peel. Came out almost like a 'butter' instead of a jam mostly because being frozen and thawed changed the texture of the fruit. I'm experimenting with no-sugar jam attempts... Tastes tangy and lovely. I feel so productive, in a delayed sort of way. Wish I could share it with you all.

I'm busy ploughing my way through my Tolkien poems, posting them to the new 'master list' project at [livejournal.com profile] written_leaves in sets or occasionally alone. Thank goodness at some point in the past I started keeping a list of all my poems in the order of the story they are illustrating, it's proved invaluable as I go along.
More, mostly to keep myself updated )

No wonder I gave up on hand-copying them into a journal a while back. Onward!

Also made a batch of gingerbread dough today to try my hand at sculpting something for our Tolkien-themed Gingerbread Contest this year, yum... hard to leave the dough alone, I love gingerbread.

Thank you to 'anonymous' - I've never had a virtual gift before and had vaguely wondered what they were, now I know! The little snowflake cookies are adorable, make me want to go mix up some sugar-cookie dough and play around with the real thing.

This morning I was rejoicing greatly that the last of my plums were in (well, most of them, just a few that were held back in Ripening 101 class still among the leaves) and thinking I would sit back a few days and ignore the yard and write, when I realized the yellow transparents were all over the ground and in gathering those up to make some apple crisp and sauce I passed through the grape arbor and realized it was heavily scented of ripe concords.

Oh my.

SO...instead of flaking out, it was peel and steam time. We are dining on a huge pan of apple crisp and the steamer is underway on the stove, steaming out the first of what promises to be MANY quarts of grape juice this year, and a huge metal bowl of yet more apples awaits me on the deck. So much for writing!

My house smells like a fruity winery, or the inside of a very large grape.

My son - my teenaged son, you know...the kind who slumps about in the exact same set of clothing day after day and would continue on until it fell from his body in rotting rags unless he were forced to change, the kind that, given a chance to speak to his grandmother on the phone abruptly regresses to caveman-like grunting...

He Cooked Dinner!! Cheerfully! By Himself!

True, it was 'only french toast' but There is Hope. Someday when my possible grandkids are all going "Daaaaad, we're huuuuuungry!" he can whip out a spatula and cry "Never fear! All is NOT lost just because mom isn't here, I can make FRENCH TOAST!"

*confetti*

Seeking to please my DH who now can't have sugar and has missed the wonderful pollo en mole that our favorite restaurant makes, I tried making some sugar-free in the crock-pot today. Only problem - it made a LOT - good grief. I have a large crock pot up to it's lid - the plastic lid is actually floating - with sauce and chicken (mostly sauce). And then we stuffed ourselves on it and thanks to the large amounts of unsweetened chocolate in the sauce, we're all completely caffeine buzzed now. Thank goodness for freezers - I think we'd all be buzzing along on mole sauce for a week otherwise.

All this steer-around-the-ingredient stuff is coming easier to me with time - I've now learned to steer around wheat, sugar and salt. It is annoying how much prefab stuff is loaded with all of the above, I am terribly fond of lazy convenience when I can get it.

How's the food allergy situation in your house? Or are you one of the lucky ones who can eat anything they like?
